Bulgur is a grain with can be easily cooked and is cleaned, semi boiled, dried and separated into different parts and sizes. The bulgur production units of Arbel are capable of three different grinding functions and cooking methods. Often Bulgur is mistaken for broken rice but it’s different from it because of the fact that it is boiled before. The process of producing Bulgur is different from the one of producing broken rice. Olive Oil
Olive Oil

The olive tree (olea europea) is a long-living and resistant tree. Although it grows very slowly and needs a lot of effort it has a long life. Therefore in mythology as well as botanics it’s called “the immortal tree”. Because of its deep going roots, it grows on dry soil with limestone, stone and gravel and the optimal climate for it is warm summer and mild winter. Olive trees like the light, sun and a temperature above 15 degrees Celcius. Annual rainfall of 220mm is enough for fruitful growth. The olive tree grows generally on low altitude geography. It looks like a bush and its leaves do have a dark color on the top side and a silver color on the bottom side. Leaves are growing in a perfect formation on the branch. The body which has a width of approximately 40-50 cms is highly resistant to decay. When the tree gets old freshly growing spikes on the body strengthen the body. With an average height of between 2-10 meters, olive trees do grow one year with a massive amount of product followed by a year of less amount. It does flourish in the southern hemisphere in April and June. Green olives do ripe between August and November.
The type of fruit collection did almost not change for thousands of years and is done either by hand or with the help of a stick. In Turkey, the traditional method of tree shaking with the help of a pole is slowly replaced by machine harvesting. Today machines do shake the body or the branches of the trees whereas a sucking system collects the fallen olives from the ground. In the hand-harvesting method, the so-called milking or carding method is used. For the collection of the olives from the ground, a roller or a brush is used. 9-10 kg of olives can be harvested in an hour and if the product is intact the best quality of olive oil can be produced.
In Olive Oil history a culture that hasn’t changed for thousands of years is the tradition of olive oil extraction from olives. The reason for it is that it can be consumed with absolute no chemical treatment after it has been produced with breaking, kneading, centrifugal (pressing) methods. Olive fruit contains 20% oil, 40% glaucoma and 40% solid matter. Just like in the past the olive oil extraction methods are almost the same. Olives are pressed to pulp. Afterward, the pulp is pressed finally the oil is separated from glaucoma. In the 19th century, the usage of machines and hydraulic presses came in. Today centrifugal machines are used to produce oil from olive pulp. These facilities are called “continuous systems”.
Continuous Systems are fully automated machines. Olives which fell to the ground aren’t good for quality olive oil hence are treated differently. In an operation which is called funnel where leaves are separated and soil is cleaned from the olive fruits with washing, blowing is crushed afterward in the crusher. The olives which are crushed in the crusher at approximately 1000-2500 rpm are collected in the malaxer. Malaxer is the part where the kneading process is done. In this section, the olives are kneaded for 45-55 minutes and the oil comes out. The pulp moves to the decanter area where oil, glaucoma and pomace are separated from each other. After being cleaned with a centrifugal machine the oil is transferred into steel vessels for resting and getting rid of remaining residue. The next step is where the oil is filtered through a closed filter system and “polished” (brightened) and bottled afterward. The pomace which is left still contains 4-6% oil. In order to obtain 1,5-2& of this remaining oil water and hexane extraction are being used in the second decanter. The oil which is obtained for the second time is called pomace oil. It never should be accepted as olive oil. The pomace which oil has been extracted can be dried and separated into cellulose and kernel. Pomace is a very clean fuel with a 3500 kcal/kg heat energy level. Having said that it must be burned in special turbo furnaces.
In order to obtain high-quality olive oil good olives with an intact body should be harvested with appropriate methods and transferred to the olive pressing facilities immediately and treated with the right processes. The processing of olives within the shortest time frame after being harvested is very important. Olives are fermentable and create mold or heating. In this situation, the quality of the olive oil will become less and loses its feature of natural outflow. For this reason, olives should be collected in 20-25 kg plastic baskets with holes in them. The quality of the olive oil is dependent on the variety of the tree, the geographic features of the area where the tree is, the climate, whether pest control has been done or not, harvesting time and method, the technology which has been applied during the production process, warehousing and packaging. To analyze the quality of olive oil highly developed, modern and complex methods are used. With the usage of gas chromatography and liquid chromatography devices even a level of 1% vegetable oil can be identified. Other than that it’s also important to identify and evaluate the sensational features of the oil like taste and perfection of its purity. Professional tasters come into play here. With this method the olive oil is evaluated for its naturalness, physical, chemical and sensitive features is classified by quality definitions like;
